Serves 2 people

Ingredients: 

1 can tomato paste
1 cup mozzarella cheese 
2 pita pockets, each cut lengthwise to separate into 4 total mini ‘pizzas’
¼ cup of your favorite Wise Goat sauerkraut
¼ onion, roughly chopped
-1 handful spinach
-Italian seasonings to taste

Method: 

  1. Preheat oven or toaster oven to 350.
  2. Cut pita pockets in half so that you create two mini ‘pizza’ pallets. Scoop a tablespoon of tomato paste onto your pitta and spread evenly. 
  3. Cover tomato paste with mozzarella cheese, spinach, and onions. Sprinkle with italian seasoning.
  4. Cook in oven for 13-15 minutes or until cheese is completely melted and crust is getting crispy.
  5. Remove from oven, top with sauerkraut and serve. 

*(Option to add on sauerkraut before baking. Flavor will still be delicious but you will lose the probiotic benefits).
