A seasonal ferment with fresh, organic, purple daikon radish that is thinly sliced and fermented in a kimchi brine.  The fermentation process not only produces a high quantity of probiotics but it also lends to milder radish flavor.  This is due to the probiotics breaking down and pre-digesting the radish which also makes it’s nutrients more bioavailable for humans to digest.  A win all around!  It is great in spring rolls, Japanese style salads with miso dressing, ramen soup and stir-fry.  One of the best ways to consume one of the most nutrient dense vegetables available!
