Serves 2-3 people

Ingredients:

-2 red peppers
–1 large onion
–2 cups roughly chopped Savoy cabbage
–2 large broccoli heads
–1 cup shredded rotisserie chicken
–1 cup frozen or fresh shelled edamame beans
–1/2 cup Wise Goat Spicy Garlic Sauerkraut
–1/2 cup crushed peanuts
–1 cup rice
–2 tbs olive oil
–2 tbs tahini
–1/4 cup soy sauce
–1 tbs fresh minced garlic
–1 tbs fresh minced ginger
–salt and pepper to taste

Method: 

  1. Put 1 cup of rice and 2 cups of water in rice cooker. While it’s cooking, chop the peppers, onions, cabbage, and broccoli. 
  2. Toss broccoli with olive oil, salt, and pepper then bake in over at 375 degrees for 20-25 minutes or until lightly browned and crispy. 
  3. Mix together the tahini, soy sauce, garlic, and ginger in a small cup. Add more or less of each ingredient depending on preference.
  4. While broccoli is baking and rice is cooking, sauté the peppers, onions, and cabbage on medium heat with a little olive oil. Once they are slightly wilted and browned, add in the edamame beans, shredded rotisserie chicken, and the soy sauce/tahini dressing and continue cooking for another 5 minutes.
  5. Scoop rice into bowls, add broccoli and sautéed mixture, then top with crushed peanuts and Wise Goat Sauerkraut. Serve warm and enjoy!
