Serves 2-3 people
Ingredients:
-2 red peppers
–1 large onion
–2 cups roughly chopped Savoy cabbage
–2 large broccoli heads
–1 cup shredded rotisserie chicken
–1 cup frozen or fresh shelled edamame beans
–1/2 cup Wise Goat Spicy Garlic Sauerkraut
–1/2 cup crushed peanuts
–1 cup rice
–2 tbs olive oil
–2 tbs tahini
–1/4 cup soy sauce
–1 tbs fresh minced garlic
–1 tbs fresh minced ginger
–salt and pepper to taste
Method:
- Put 1 cup of rice and 2 cups of water in rice cooker. While it’s cooking, chop the peppers, onions, cabbage, and broccoli.
- Toss broccoli with olive oil, salt, and pepper then bake in over at 375 degrees for 20-25 minutes or until lightly browned and crispy.
- Mix together the tahini, soy sauce, garlic, and ginger in a small cup. Add more or less of each ingredient depending on preference.
- While broccoli is baking and rice is cooking, sauté the peppers, onions, and cabbage on medium heat with a little olive oil. Once they are slightly wilted and browned, add in the edamame beans, shredded rotisserie chicken, and the soy sauce/tahini dressing and continue cooking for another 5 minutes.
- Scoop rice into bowls, add broccoli and sautéed mixture, then top with crushed peanuts and Wise Goat Sauerkraut. Serve warm and enjoy!
