You may notice this batch of our vegan kimchi has a bright red / magenta color to it. That’s because we used beautiful purple napa cabbage! Normally, we use green napa cabbage, but our local farmers didn’t have any available—so we embraced the season and tried something new. This natural color variation is a reflection of our commitment to using the freshest, seasonal ingredients. The flavor profile is very similar to our traditional vegan kimchi.  We hope you enjoy this very limited and special edition kimchi!
